Apples and Gin are the perfect cocktails – Especially when you use the oldest Danish apple, which also comes from South Funen. Filippa can do something that other apples cannot, it is spicy, sweet and has a fresh acidity after harvest. Filippa is a Gin innovation where the finished distilled gin is drawn with fresh Filippa apple pieces, and the gin extracts the flavour from the apple. When the apples have soaked, they must be distilled separately and added to the gin - which gives a creamy and soft taste of spicy fresh apples.

It can be enjoyed pure chilled over ice cream or with a good slim tonic which gives a beautiful green and fragrant experience. Try it as an aperitif with 1 part gin to 2 parts sparkling sweet Asti or Prosecco – served ice cold with some apple pieces

Botanicals: juniper, anise seed, cloves, pink pepper, coriander seeds and fresh zest from lime, lemon and orange.

Garnish: fresh apple pieces, fresh thyme

Mixers: Fentiman hyldeblomst soda, Indi tonic, Fevertree Mediterranean, Fevertree Elderflower
